Typical skirt steak isn’t the tenderest—which is why you slice it against the grain—but our Wagyu has so much marbling, you may not even need a knife. Each order comes with two 8 oz. skirt steaks.

We feed our organic hay pure snowmelt from Rocky Mountain National Park and nutrient-rich fertilizer from our alpaca herd (Merlin, Jackson Hole, and gang).
